12 oz  dried apricots
1 1/2 cup  cider vinegar
1 1/2 cup  sugar
1 cup  canned green chile peppers
0 1/2 cup  dried cherries
0 1/2 cup  fresh chopped red onion
1 each  cinnamon sticks
1 1/2 tsp  mustard seed
0 3/4 tsp  salt
  1. Mix apricots, vinegar, sugar, chilies, cherries, red onion, cinnamon, mustard seed, and salt in a pot and heat over high heat.
  2. Let mixture boil. Reduce heat to low, place a lid on pot, and simmer 20 to 25 minutes or until apricots are soft. Take lid off and simmer another 5 minutes or until liquid evaporates.
  3. Let mixture cool. Take cinnamon sticks out of mixture and serve.
