3 cup  cold water
1 3/4 cup  sugar
1 1/2 lb  Apricots, fresh, halves
2 tsp  vanilla extract
  1. Boil water and sugar in a medium pot over medium high heat, stirring often. Mix in apricots and let boil.
  2. Lower heat, place a lid on the pot, and let simmer for 10 minutes, apricots should be soft.
  3. Using a food processor or blender puree apricot mixture with vanilla until smooth. Place mixture in refrigerator until chilled.
  4. Spoon mixture into the freezer bowl of an ice cream freezer and process following manufacturers directions. Spoon mixture into a freezer safe container and place in freezer for at least 2 hours.
