2 1/2 cup  white all purpose flour
1 cup  dried apricot halves
0.6667 cup  sugar
0 1/2 cup  chopped walnuts
1 tbsp  low sodium baking powder
1 tsp  salt
4 tsp  grated orange peel
1 cup  orange juice
0 1/2 cup  fat free milk
3 tbsp  unsweetened applesauce
2 each  egg whites
1 each  cooking spray
  1. Preheat oven to 350 degrees F Spray a 9 x 5 inch loaf pan with cooking spray and set aside.
  2. Mix flour with apricots, sugar, walnuts, baking powder, salt, and orange rind in a bowl.
  3. In a separate bowl, whisk together orange juice, milk, applesauce, and egg whites. Gradually stir flour into juice mixture until fully combined.
  4. Spoon batter into prepared pan and bake for 1 hour or until set. Let cool on wire rack.
