1 each  medium lemons
0 1/2 cup  sugar
1 1/4 lb  fresh apricots
2 tbsp  orange juice
0 1/4 cup  Jam, apricot
  1. Wash lemon and cut off top and bottom; slice lemon into paper-thin pieces and remove seed.
  2. Boil 1 cup of water; put lemons in water and cook 1 minute. Strain and repeat one time.
  3. Add lemon and 1/4 cup sugar to a pot and heat over medium-high heat until all the liquid absorbs, 4 to 5 minutes.
  4. Wash apricots and remove pit; slice fruit into 3/4-inch pieces. Arrange apricots in a round pie plate in one layer. Place lemon pieces in between apricot slices. Pour orange juice or apricot brandy over fruit top with the rest of the sugar.
  5. Bake in a 450 degrees F oven for 25 to 30 minutes or until browned.
  6. Mix apricot jam and spoon over fruit. Place back in oven and bake apricots another 5 minutes or until jam is bubbly.
