2 1/2 cup  white all purpose flour
0 3/4 cup  sugar
2 tsp  baking soda
1 1/2 tsp  ground cinnamon
0 1/4 tsp  ground nutmeg
0 1/4 tsp  salt
0 3/4 cup  chopped walnuts
2 cup  low fat cheddar cheese, shredded
1 cup  dried apricot halves
2 each  raw large eggs
1 cup  whole milk
2 oz  butter
3 tbsp  packed brown sugar
Directions
  1. Combine 2 1/2 cups flour, sugar, baking soda, 1 teaspoon cinnamon, nutmeg, and salt. Stir in nuts, cheese, and apricots.
  2. Whisk together eggs, milk, and 1/3 cup butter. Stir liquid mixture into flour mixture until a batter forms.
  3. Butter and flour two 4 1/2 x 8 1/2 -inch loaf pans; spoon batter into each pan. Mix brown sugar with 1 tablespoon melted butter, and 1/2 teaspoon cinnamon and sprinkle over top of loaves.
  4. Bake at 350 degrees F for 30 to 35 minutes or until set.
  5. Let cool in pans for 10 minutes; move to racks and let cool further.
