0 1/2 tsp  lime peel zest
2 tbsp  fresh lime juice
2 lb  medium nectarines
2 tbsp  olive oil
1 oz  honey
0.125 tsp  black pepper
4 oz  prosciutto
8 oz  Greens, watercress, fresh, sprig
1 oz  pistachios
  1. Place 1/4 teaspoon of lime zest, lime juice, nectarines, oil, honey, and pepper in a bowl and mix well. Set aside for 10 minutes so flavors can blend.
  2. Arrange the nectarine mixture on a large platter with the prosciutto and watercress.
  3. Sprinkle with pistachios and remaining 1/4 teaspoon of lime peel and serve.
