6 cup  diced watermelon
3 each  medium cucumber
1 each  whole jalapeno pepper
3 tbsp  red wine vinegar
0 1/2 tsp  salt
  1. Peel and chop cucumber. Remove membrane and seeds from jalapeño and mince.
  2. In large bowl, gently toss watermelon, cucumber, jalapeño pepper, vinegar, and salt.
  3. Refrigerate at least 20 minutes, up to 2 hours. Toss before serving.
