2 1/2 cup  ground almonds
1 cup  sweetener (sugar substitute)
1 tsp  almond extract
2 each  egg whites
1 each  cooking spray
  1. Preheat oven to 350 degrees F. Blend the almonds and sugar together in a food processor with the knife blade.
  2. Add the almond and/or vanilla extract and egg whites, and blend until it forms a paste.
  3. Roll into small balls in the palm of your hand. Shape each like a crescent or keep round and place half an almond in the center.
  4. Spray a cookie sheet with non-stick cooking spray or line with baking paper.
  5. Bake for 10-12 minutes. Remove from sheet and cool.
