2 each  boneless skinless chicken breasts
1 pinch  black pepper
2 tbsp  canola oil
2 each  small onions
2 cup  fresh broccoli florets
1 each  medium tomatoes
1 pinch  salt
  1. Cut chicken into bite-size pieces and toss with 1 tablespoon oil.
  2. Add to large skillet, cook over high heat, stirring frequently, 5 minutes or until just tender.
  3. Reduce heat to medium. Add remaining oil and onion, cook 2 minutes.
  4. Add broccoli and tomato. Sprinkle with salt and pepper.
  5. Cover and cook 4 minutes or until vegetables are crisp, but tender.
