  1. Cut chicken into bite-size pieces.
  2. In large skillet, heat 1 tablespoon oil over medium-high heat. Add chicken, cook 5 minutes, stirring frequently until thoroughly cooked.
  3. Reduce heat to medium. Add remaining oil, onion, and broccoli. Cook 5 minutes.
  4. Add tomato. Sprinkle with salt and pepper. Cover and cook additional 2 minutes.
