3 lb  Pork, shoulder, whole, lean, raw
1 each  small onions
4 each  medium garlic cloves
2 tsp  ground sage
1 tsp  ground savory
2 tsp  salt
0 1/2 tsp  black pepper
6 tbsp  whole milk
  1. Trim pork of all fat, cut into 1 1/2 inch cubes. Freeze pork for 30 minutes.
  2. In meat grinder or food processor, grind pork and then grind pork again with onion and garlic.
  3. In large bowl, mix seasonings into pork mixture. Stir in milk 1 tablespoon at a time. Cover and chill for one hour.
  4. Form into 16 even sized patties. Cover and refrigerate for 12 to 24 hours to blend flavors. Use within two days or wrap in air tight paper and freeze.
  5. Cook over medium high heat on griddle or in skillet until browned and cooked through.
