Ingredients

2 piece  raw bacon slices
1 cup  fresh chopped onion
32 oz  baby carrots
1 1/2 cup  apple cider
0 1/4 cup  packed brown sugar
0 1/4 tsp  ground red pepper (cayenne)
2 tbsp  fresh chives
Directions
  1. Crisp bacon in a frying pan. Take bacon out of pan and crumble. Set aside.
  2. Saute onions in bacon fat for 3 minutes. Mix in carrots, cider, sugar, and pepper and let boil; cook 10 minutes over medium heat or until carrots are soft.
  3. Spoon carrots and liquid into a serving platter and top with bacon and chives.
