1 lb  Pork, tenderloin, lean, raw
0 1/2 tsp  black pepper
1 tsp  pumpkin pie spice
1 tsp  vegetable oil
1 each  small onions
1 each  Apples, fresh, large, FDA
0 1/2 cup  apple cider
  1. Season medallions on both sides with pepper and pumpkin pie spice.
  2. Heat oil in a large nonstick skillet over medium high heat, brown pork on both sides, remove from pan and reserve.
  3. Add onion and apples to skillet, saute until soft.
  4. Add apple cider to skillet, heat to a simmer.
  5. Return pork medallions to pan, cover and simmer for 5 minutes.
