0 1/2 cup  margarine
0.6667 cup  sugar
0.6667 cup  fat free ricotta cheese
1 each  eggs
0 3/4 tsp  lemon extract
1.3333 cup  white all purpose flour
0 1/2 tsp  low sodium baking powder
0 1/2 tsp  baking soda
0 1/4 tsp  salt
1 1/4 cup  powdered sugar
3 tbsp  fat free milk
  1. Using electric mixer, beat 6 tablespoons butter and sugar until fluffy. Beat in ricotta, egg, and 1/2 teaspoon lemon extract.
  2. Combine flour, baking powder and soda, and salt in a bowl and gradually beat into butter mixture.
  3. Spoon batter by the tablespoon onto buttered baking sheets, at least 2 inches apart.
  4. Bake at 325 degrees F for 20 to 25 minutes. Move cookies to wire racks to cool.
  5. Melt 2 tablespoons butter. Combine butter, powdered sugar, 1/4 teaspoon lemon extract, and milk and mix until smooth. Dip cookies, one at a time into frosting and lay on racks in a single layer. Let stand 10 minutes for frosting to harden.
