0 1/4 tsp salt 2.0
2 tsp grapefruit zest 6.0
6 each egg whites 0.75
0 3/4 tsp cream of tartar 1.5
1 1/2 tsp vanilla extract 10.0
10 oz frozen strawberry halves in syrup 3.0
3 each medium grapefruit

Directions

Preheat oven to 350 degrees.
Combine 1/3 cup sugar, flour, salt, and rind, and set aside.
Using electric beaters blend together egg whites and cream of tartar until fluffy.
Beat in the rest of the sugar, 1 tablespoon at a time until stiff peaks are made.
Fold in vanilla. Gently and gradually fold in flour mixture.
Pour batter into a 9 x 5 inch loaf pan. Tap pan on counter to release air bubbles.
Bake for 30 minutes.
Flip pan on a wire rack and let cool. Release cake from pan onto wire rack and continue to cool.
Using a food processor or blender, puree strawberries with syrup until smooth.
Spoon into a bowl and mix in grapefruit. Serve with cake.
