0.6667 cup  sugar
0 1/2 cup  white all purpose flour
0 1/4 tsp  salt
2 tsp  grapefruit zest
6 each  egg whites
0 3/4 tsp  cream of tartar
1 1/2 tsp  vanilla extract
10 oz  frozen strawberry halves in syrup
3 each  medium grapefruit
  1. Preheat oven to 350 degrees.
  2. Combine 1/3 cup sugar, flour, salt, and rind, and set aside.
  3. Using electric beaters blend together egg whites and cream of tartar until fluffy.
  4. Beat in the rest of the sugar, 1 tablespoon at a time until stiff peaks are made.
  5. Fold in vanilla. Gently and gradually fold in flour mixture.
  6. Pour batter into a 9 x 5 inch loaf pan. Tap pan on counter to release air bubbles.
  7. Bake for 30 minutes.
  8. Flip pan on a wire rack and let cool. Release cake from pan onto wire rack and continue to cool.
  9. Using a food processor or blender, puree strawberries with syrup until smooth.
  10. Spoon into a bowl and mix in grapefruit. Serve with cake.
