1 Pour sherry into a pot and heat over high heat 5 minutes, mixture will be reduced to half. 2 Whisk together broth and flour and pour into pot. Whisking continually, let boil. Lower heat to medium and simmer 10 minutes, whisking often. 3 Stir in butter, if using. Season with salt and pepper.

Be careful when heating sherry, it may flame up. This gravy goes great with turkey.
