1 Melt butter, margarine or cooking oil in a large skillet. Add the squash, onion, salt, pepper and either water or the tomatoes. Simmer covered for about 15 minutes. 2 While that is cooking mix the cheddar cheese and chia seeds until combined. 3 When the zucchini is cooked, move to a serving dish. Then sprinkle the chia and cheese mixture over the top, let melt and serve hot.
