Servings
Ingredients
1 tbsp fresh lemon juice
2 medium garlic cloves , crushed
1 tbsp olive oil
0.5 cup canned garbanzo beans (chickpeas), unsalted , rinsed and drained
1 pinch salt and pepper , to taste
0.75 lb medium zucchini
1 cup romaine lettuce , washed (several whole leaves)


Directions
1 Mix lemon juice, crushed garlic, and oil. Whisk thoroughly.
2 Add garbanzo beans, salt, and pepper.
3 Slice zucchini into 1/2 inch pieces.
4 Bring a pot filled half way with water to a boil; add zucchini.
5 Let simmer for 2-3 minutes.
6 Drain before adding the dressing. Toss well.
7 Serve on lettuce leaves.
