1 Mix lemon juice, crushed garlic, and oil. Whisk thoroughly. 2 Add garbanzo beans, salt, and pepper. 3 Slice zucchini into 1/2 inch pieces. 4 Bring a pot filled half way with water to a boil; add zucchini. 5 Let simmer for 2-3 minutes. 6 Drain before adding the dressing. Toss well. 7 Serve on lettuce leaves.
