1 Wash and trim the ends from the zucchini. Cut crosswise into 1-inch slices and set aside 2 Heat oil in a nonstick-surfaced frying pan over medium heat. Add onions and peppers and cook until onions begin to soften, stirring frequently. 3 Add tomatoes and cook 2 minutes. 4 Add zucchini and cook for 10 minutes, stirring occasionally. 5 Add corn, salt, and pepper. Cover and cook for 10 to 12 minutes, stirring occasionally. Serve immediately.
