1 Squeeze zucchini with paper towels to remove excess water. 2 In food processor or blender, process zucchini, cilantro, olive oil, garlic, salt, and pepper, until mixture is smooth. 3 Spoon mixture into serving bowl and fold in nuts. 4 Cover and refrigerate 1 hour before serving.
