1 Lightly coat 12 muffin tin cups with cooking spray, or line with paper liners. 2 In medium bowl combine buttermilk, oats, and cereal. Set aside for 30 minutes. 3 Preheat oven to 400°F. 4 In separate mixing bowl use electric mixer to blend butter and brown sugar . 5 Beat in egg and stir in flour, baking soda, baking powder, salt, and cinnamon. 6 Add flour mixture to oats mixture and stir. 7 Add zucchini, raisins, and walnuts. 8 Divide batter among muffin cups. 9 Bake 35 minutes, or until toothpick inserted into center of muffin comes out clean and dry.
