Servings
Ingredients
4 medium zucchini , shredded (about 2 lb)
1 pinch salt
6 oz yellow onion , chopped finely (about 2/3 cup)
1 medium garlic cloves , minced
0.25 cup whole wheat flour
0.5 cup Cheese, mozzarella, whole milk, shredded
0.25 cup grated Parmesan cheese
1 tsp italian seasoning
1 pinch black pepper
2 eggs
2 egg whites
1 cooking spray


Directions
1 Preheat oven to 375°F.
2 Season zucchini with salt, allow to drain in colander 10 minutes. Wash, and dry very well with paper towels.
3 In large mixing bowl, combine zucchini, onion, garlic, flour, mozzarella, parmesan cheese, and Italian seasoning.
4 Sprinkle with pepper, add eggs and egg whites.
5 Lightly coat 12" pizza pan with cooking spray.
6 Spoon zucchini mixture onto pan, spread to edges. Lightly coat with cooking spray and bake 30 to 40 minutes.
Additional Information
Add your favorite toppings, or serve as a tasty flatbread.
