1 In large skillet, heat 2 teaspoons of oil over medium high. Add 2 cups of zucchini, cook 4-5 minutes. 2 Move zucchini to medium bowl. 3 Cook remaining 2 cups of zucchini 4-5 minutes. Transfer to bowl with other zucchini. 4 Add 2 teaspoons of oil, mint, garlic, salt, and pepper. 5 Toss, refrigerate 30 minutes until chilled.
