Ingredients
2 lb chopped zucchini , shredded (about 4 medium zucchinis)
1 pinch salt
0.67 cup fresh chopped onion , chopped finely
1 medium garlic cloves , minced
0.25 cup whole wheat flour
0.5 cup Cheese, mozzarella, fat free, shredded
0.5 cup reduced fat grated parmesan cheese
1 tsp dry italian seasoning
1 pinch black pepper
2 eggs
2 egg whites
1 cooking spray


Directions
1 Preheat oven to 375 degrees F.
2 Season zucchini with salt, and let drain in colander 10 minutes. Wash, and dry very well with paper towels.
3 Combine zucchini, onion, garlic, flour, mozzarella, parmesan cheese, and Italian seasoning. Sprinkle with pepper, add eggs and egg whites.
4 Coat a 12-inch pizza pan with cooking spray. Lay zucchini mixture onto pan, and spread to edges. Coat dough with cooking spray and bake 30 to 40 minutes.
