1 Preheat oven to 425°F. 2 Lightly coat medium baking dish with olive oil spray. 3 Remove stems from mushrooms by gently twisting until easily removed from mushroom top. 4 Place caps in medium baking dish, stem side up. Set aside. 5 Mince stems and place in separate mixing bowl. 6 Add cheese, parsley, oil, and cayenne to stems. Mix well. 7 Evenly spoon mixture into reserved mushroom caps, mounding filling onto each. 8 Bake for 12 to 15 minutes, or until tender. 9 Allow mushrooms to cool slightly before serving.
