Ingredients
14.5 floz low sodium vegetable broth
0.5 tsp ground turmeric
1 cup long grain white rice
0.25 cup Salsa
1 medium tomatoes , chopped
1 pinch salt
1 pinch black pepper
1 tbsp fresh cilantro , finely chopped


Directions
1 Combine broth and turmeric in a pot, and bring to boil.
2 Mix in rice and salsa. Cover and reduce heat, simmering for 20 to 25 minutes, or until liquid is absorbed.
3 Mix in tomatoes during the last 5 minutes of cooking. Sprinkle with salt and pepper. When ready to serve, top with cilantro.
