1 Place oil in a large nonstick pan and sauté the artichoke hearts, shallots, onion, and garlic until artichokes are separated and onion is soft but not brown. 2 Add in vinegar and wine, bring to a boil. 3 Lower heat, simmer, covered until artichokes are soft, about 10 minutes. Season to taste with salt and pepper, optional.
