1 Lightly coat pot with cooking spray. Heat over medium, add shallots and garlic. Cook 3 - 4 minutes, or until soft. 2 Reduce heat to medium-low. Add mushrooms, cover, and cook 5 additional minutes. 3 Add sherry, lemon juice, and thyme. Bring to boil. 4 Lower heat, simmer 5 minutes, or until all liquid evaporates. 5 In mixing bowl, whisk together broth and cornstarch. Add to pot and return to boil. Continue boiling, stirring constantly, 1 minute or until thick. 6 Sprinkle with salt and pepper.
