Servings
Ingredients
1.25 cup Flour, pastry, whole wheat, stone ground
1.25 cup whole milk
3 eggs
2 tbsp unsalted butter , melted
0.25 tsp salt
1 tbsp unsalted butter , cold, cut into 6 pieces


Directions
1 Place oven rack in lower position and preheat oven to 400°F.
2 Lightly coat popover pan or jumbo muffin tin with cooking spray.
3 In food processor or blender process until smooth flour, milk, eggs, melted butter, and salt.
4 Place pan in oven for 2 minutes.
5 Remove pan from oven and place one slice of cold butter into each cup.
6 Return pan to oven for an additional minute, or until butter melts.
7 Fill each cup halfway with batter and bake 20 minutes.
8 Reduce temperature to 350°F and bake additional 20 minutes.
9 Remove popovers from cups and cool slightly on wire rack. Serve warm.
Additional Information
When baking be sure to leave oven closed to prevent popovers from falling.
