Ingredients
1 cup white all purpose flour
1 cup whole wheat flour
1 tsp low sodium baking powder
1 tsp baking soda
0.5 tsp salt
0.25 cup wheat germ , toasted
1.33 cup fresh mashed banana
0.5 cup sweetener (sugar substitute) , divided
0.25 cup vegetable oil
1 eggs , lightly beaten


Directions
1 Preheat oven to 350°F.
2 Coat nonstick 24-cup muffin pan with cooking spray or line with muffin papers.
3 In large bowl, mix both flours, baking powder, baking soda, salt, and wheat germ.
4 In separate bowl, mix bananas, sweetener oil, and egg; add to the dry ingredients.
5 Mix until dry ingredients are moist, then fill muffin cups 2/3 full.
6 Bake for 20 minutes.
Additional Information
You can also make this into banana loaf, coat 9" x 5" x 3" loaf pan with cooking spray. Add batter, bake at 400°F for 40-45 minutes. This makes 18 slices, 1/2" each.
