Directions
1 Preheat oven to 400 degrees F, and line a muffin pan with papers or coat with a nonstick cooking spray, and in a small bowl, mix 1/2 cup all purpose flour and the apple in a small bowl, tossing to coat. Set aside.
2 Use a large bowl, and mix the remaining 1 cup all purpose flour, whole-wheat flour, brown sugar, baking powder, cinnamon, and salt, and make a well in the center of the mixer. In a separate small bowl, mix together the milk, oil, and egg whites. Stir well.
3 Add the milk mixture, apple mixture, pecans and raisins to the well of the flour mixture, stirring just until the dry ingredients are moistened, and spoon the batter into the prepared pan, filling two-thirds full. Bake for 20 minutes, or until it is golden brown, and cool in pan.
