1 Preheat oven to 500 degrees F. With foil, line a baking sheet and coat with nonstick spray. 2 Make 4 deep cuts, crosswise, to the bone, with a sharp knife, on both sides of fish. 3 With the oil, rub both sides of the bass, and then sprinkle with the salt and pepper. 4 In a bowl, mix the basil, cilantro, and lime juice. Use the mixture to rub both sides of the bass. Roast 45-55 minutes until center of fish is opaque.
Additional Information
When purchasing a whole fish it should have a fresh, mild odor and red to bright-pink gills that are free of slime or residue. You could also try whole red snapper, grouper, or tilapia.
