Ingredients
1 medium garlic cloves , crushed
0.5 cup white wine (dry)
1 tbsp fresh lemon juice
1 tsp olive oil
1 tbsp fresh chopped red onion (or shallot)
0.25 tsp ground thyme
0.12 tsp black pepper
0.5 lb boneless pork loin


Directions
1 To make the marinade, combine all the ingredients (minus the pork) in a heavy, freezer-style plastic bag. Next, add the roast and marinade in the refrigerator for at least an hour, but as long as overnight.
2 When ready to cook, preheat the oven to 350 degrees F. Then, remove the meat from the marinade and place on a rack in a roasting pan treated with nonstick spray.
3 Roast for 20 to 30 minutes or until the meat thermometer reads 150 to 170 degrees, depending on how cooked you like your pork.
