Ingredients
5 oz fresh spinach leaves , rinsed and stemmed
2 medium garlic cloves , pressed or minced
1.5 cup canned cannellini beans , cooked
1 cup chopped scallions
2 tbsp fresh basil
2 tbsp fresh lemon juice
5 fresh artichokes , minced
1 pinch salt and pepper , to taste


Directions
1 Place about an inch of water at the bottom of a large saucepan. Place on high heat and add spinach, steaming for 2 to 3 minutes. Drain.
2 In a food processor, puree the spinach, garlic, beans, scallions, basil and lemon juice until very smooth. Fold in the minced artichokes hearts and add more lemon juice and salt to taste. Serve chilled or at room temperature.
Additional Information
You can replace the cannelini beans with butter beans or navy beans.
