1 In large saucepan, bring water to boil. Add barley, bring to boil again, then reduce heat.
2 Simmer, covered, 20 to 25 minutes. Drain and rinse under warm water. 3 Add oil to saucepan. Return the barley to pan.
4 Add celery, nuts, salt, and pepper. Cook on low until thoroughly heated, stirring gently. 5 Transfer to serving dish. Garnish with parsley.
