Directions
1 Preheat oven to 350 degrees F. Coat a 9x5x3-inch loaf pan with nonstick cooking spray.
2 In a bowl, mix together the flour, sugar, baking powder, baking soda, dry mustard, and cayenne.
3 Add the oil, and work together with a pastry blender or fingertips. Stir in the shredded cheese.
4 In a small bowl, blend together the buttermilk and egg; stir into the flour mixture just until moistened.
5 Mix in the spinach and walnuts. Transfer to the prepared loaf pan.
6 Bake for 40 minutes, or until the top is lightly browned. Serve warm or at room temperature.
