1 Preheat oven to 350°F. 2 Lightly coat baking sheet with cooking spray. 3 Cut chicken into bite sized pieces, sprinkle with sherry. Set aside. 4 Place walnuts in small shallow dish. 5 In small bowl, beat egg white and oils until frothy. 6 Fold chicken pieces into egg mixture, remove and roll individual pieces in ground walnuts. 7 Arrange chicken pieces on baking sheet, cook 10-15 minutes, or until walnuts are lightly browned and chicken juices run clear.
