1 To prepare, heat oil in a large nonstick skillet over medium-high heat until hot. Add onion; cook 3 minutes, stirring frequently. 2 Add garlic and mushrooms; cook 5 minutes; stirring frequently. 3 Add broth; bring to a boil. Stir in rice; cover, reduce heat and simmer 20-25 minutes or until broth is absorbed and rice is tender. 4 Stir in walnuts, cheese, parsley, and salt. 5 Serve immediately.
