Servings
Ingredients

1 tbsp canola oil
1 medium onions , chopped
4 medium carrots , sliced
1 large green bell peppers , chopped
1 medium zucchini , chopped
2 medium garlic cloves , minced
1 tbsp chili powder
15 oz canned tomato sauce
16 oz canned kidney beans , rinsed and drained
16 oz canned black beans , rinsed and drained
29 oz canned unsalted diced tomatoes , with juice


Directions

1 Heat oil in a large soup pot over medium-high heat.
2 Add onion and carrots and saute 5 minutes. Add green pepper and zucchini and saute another 2 minutes.
3 Add garlic and saute another 30 seconds. Add chili powder and all remaining ingredients; bring to a boil.
4 Cover, reduce heat and simmer 30-35 minutes or until vegetables are tender.
Additional Information
You can add chopped chicken breast to this chili, if desired.
