1 Preheat oven to 350°F. 2 Lightly coat large casserole dish with cooking spray. 3 In casserole dish, layer frozen mixed vegetables, onion, and pepper. 4 In small bowl, combine tomato juice, herbs, garlic, and 2 tbsp Parmesan cheese. 5 Pour tomato juice mixture over vegetables, cover and bake 1 hour. 6 Remove cover, sprinkle with remaining Parmesan cheese. 7 Bake additional 10 minutes uncovered, until liquid thickens and mixture begins to bubble.
