1 Spray a nonstick saucepan with the cooking spray. Sauté the onion and garlic for about 2 minutes over medium-high heat. 2 Mix in the bell pepper, zucchini, tomatoes, and chicken broth and bring to a simmer. 3 Stir in the thyme, basil, vinegar, and pepper and let simmer for about 15 minutes. 4 Cook the rice in accordance with the directions on the package. Add to the soup and serve.
