Ingredients
1.25 cup cold water
0.5 cup medium grain brown rice
3 oz Nuts, peanuts, oil roasted, unsalted , slivered
2 medium carrots , peeled and cut into 1/4-inch cubes
2 yellow onion , chopped
1 medium red bell peppers , chopped
0.33 cup seedless raisins
1 tsp ground cinnamon
0.5 tsp ground cumin
0.75 tsp salt
1 cooking spray


Directions
1 Bring 1 cup of water to a boil. Add rice, decrease the heat, cover, and let simmer 25 minutes.
2 While the rice is cooking, heat a skillet over medium high heat. Cook the nuts for about 3 minutes or until browned. Stir often. Once done cooking, set aside on a separate plate.
3 Place the skillet back on the heat and spray with cooking spray. Add in the carrots, onion, and bell pepper, spray with cooking spray; cook for approximately 8 minutes.
4 Take the skillet off of the heat and add in the raisins, cinnamon, cumin, salt, and 1/4 cup water. Cover to keep warm until the rice has finished. Combine the nuts and vegetable mixture and serve over the rice.
Additional Information
You can substitute almonds for the peanuts.
