1 Cook the lightly beaten eggs in a cooking spray coated skillet over medium-high heat, and stir occasionally until the eggs are firm, 2-3 minutes. 2 Place the eggs in a small bowl. 3 In the same skillet, heat the oil and sauté the garlic and ginger until fragrant, about 30 seconds. 4 Mix the rice and vegetables with the garlic and ginger. 5 Cook, stirring occasionally, 3-5 minutes. Add the eggs, scallions, soy sauce, mirin, and salt; continue to cook until hot, about 2 minutes.

Mirin is a wine made from rice, that is an essential ingredient in Japanese cooking. Look for it in the ethnic food section in most large supermarkets. It is used with this Chinese dish, because it adds a bit of sweetness to the fried rice.
