Ingredients
2 fresh tomatoes , seeded and diced
1 medium cucumber , seeded and diced
0.5 chopped green bell peppers , seeded and diced
2 tbsp fresh chopped celery
2 tbsp minced onion
2 tbsp fresh cilantro
2 tbsp light mayonnaise
1 medium avocadoes , seeded, peeled, and diced
4 Tortilla, flour, 6.5"


Directions
1 In a medium bowl, mix tomatoes, cucumber, bell pepper, celery, red onion, cilantro, and mayonnaise.
2 Cover and chill vegetables until ready to use.
3 Just before serving, prepare the avocado and stir into vegetable mixture. Using a slotted spoon to drain off any liquid, equally split the mixture between the 4 tortillas, placing the vegetables just off-center.
4 Roll up and cut each burrito in half. Serve immediately.

These burritos taste great with fresh salsa and a dollop of fat-free sour cream.
