1 Preheat the oven to 425 degrees F. 2 Situate the onions and bell peppers on a nonstick baking pan and coat with cooking spray. Spray the mushrooms with cooking spray and place on top. 3 Season with salt and pepper and bake for 15 minutes. 4 Cook the potatoes in accordance with the directions on the package. 5 Take the pan out of the oven and move the onions and peppers to one side of the pan. 6 Pour 1 1/2 teaspoons vinegar over the mushrooms. Dust 3 tablespoons of cheese over each mushroom. 7 Put 1/2 cup mashed potatoes on top of the mushrooms then evenly place the onions and peppers over the potatoes. 8 Bake for 5 minutes or until cheese has slightly melted.
