Ingredients
8 oz medium potatoes (Yukon Gold potatoes)
2 tbsp plain nonfat yogurt
1 oz sliced, smoked ham , cut into thin slices
1 oz goat cheese , crumbled
1 pinch salt
1 pinch black pepper
1 pinch paprika
1 pinch chopped parsley


Directions
1 Poke the potatoes with a fork. Place on a paper towel and cook in the microwave for 11 minutes on a high setting. Turning them over once at 6 minutes.
2 Preheat the broiler. Cut 1/3 of the potato off and spoon out the potato into a bowl. Do not discard the skin shells. Mash up the potatoes and mix in the ham, goat cheese, yogurt, salt, and pepper. Stuff the ham mixture back into the shells. Season with paprika and parsley.
3 Place the potatoes on a pan and place under the broiler until they are lightly browned on top.
Additional Information
The salt, paprika, and parsley are all optional.
