6 fresh tomatoes
0.5 tsp salt , to taste (optional)
1 cup whole milk
1 tbsp white whole wheat flour
12 oz Turkey, ground, 8% fat, raw , cooked (1 3/4 cups)
0.5 cup fresh chopped celery
0.25 cup fresh chopped green onion
0.5 cup shredded cheddar cheese
0.5 tsp salt , to taste (optional)
0.25 tsp black pepper


Directions
1 Preheat oven to 375°F.
2 Cut tops off of tomatoes, scoop out pulp, leaving the shells intact.
3 Sprinkle inside of tomato shells with salt, and invert on paper towels to drain.
4 In small saucepan, combine milk and flour, stirring to blend.
5 Bring to boil, reduce heat, and stirring consistently, cook mixture until thicken and smooth.
6 Add turkey, celery, onions, cheese, salt, and pepper.
7 Spoon turkey mixture into tomato shells.
8 Place stuffed tomatoes in 13" x 9" x 2" baking dish. Bake 20 minutes, or until heated through.
