Servings
Ingredients
4 smoked turkey sausage , cut into 1 inch pieces (hot or sweet)
1 medium carrots , chopped
1 large onion , chopped
1 medium celery stalks , sliced thin
2 medium garlic cloves , minced
24 oz fresh cabbage leaves , 3 cups, chopped
14.5 oz canned unsalted diced tomatoes
0.25 tsp black pepper
2 cup uncooked egg noodles , cooked, hot


Directions
1 Spray nonstick cooking spray into a large nonstick pan and heat.
2 Stir in the sausages and cook until almost done, about 5 minutes.
3 Add in the carrot, onion, celery, and garlic. Cook until soft, about 5 minutes.
4 Stir in the cabbage, tomatoes, broth, and pepper. Bring entire mixture to a boil.
5 Simmer on low flame, covered, until sausages are thoroughly cooked and vegetables are soft (about 10 minutes).
6 Serve 1/4 of the sausage/vegetable mixture on top of a 1/2 cup of the noodles.
Additional Information
Cooking with hot sausages instead of sweet gives this recipe an added kick.
