Ingredients
1.5 lb turkey breast tenderloin, raw , cut into fillets
2 tbsp Flour, white, unbleached, enriched
1 pinch black pepper
1 pinch salt
2 tsp olive oil
1 large onion , diced
2 medium garlic cloves , minced
1.5 cup canned, crushed tomatoes
1 tsp fresh rosemary , minced
1 tbsp fresh thyme , chopped
0.25 cup canned black olives , sliced
2 tsp capers
0.5 cup chopped parsley


Directions
1 Combine flour, pepper, and salt in a resealable plastic bag. Place turkey fillets in bag and seal. Shake to coat.
2 Pour oil in a large skillet heated over medium heat. Arrange turkey in skillet and cook 4 minutes per side. Take turkey out of skillet and reserve.
3 Using the same skillet, add onion and garlic. Cook for 5 minutes, onions should be slightly brown. Pour in the tomatoes and let boil. Reduce heat and let simmer for 5 minutes.
4 Place the turkey back in the skillet along with the rosemary, thyme, olives, and capers. Let simmer for 10 minutes. When ready to serve sprinkle parsley over the top.
