Ingredients
12 oz Turkey, breast, oven roasted, 56% less salt, fat free , diced (about 1 1/2 cups)
0.5 cup fresh mushrooms , sliced (or canned, rinsed and drained)
0.5 cup fresh chopped onion
1 cup Peas, green, sweet, frozen , thawed
0.25 tsp black pepper
0.33 cup low fat cheddar cheese, shredded
6 tbsp white all purpose flour
2 tsp low sodium baking powder
2 tsp dried parsley
1 cup fat free milk
2 eggs (or egg substitute)
2 tbsp fat free mayonnaise


Directions
1 Preheat the oven to 400 degrees F.
2 Combine the turkey, mushrooms, onion, peas, black pepper, and Cheddar cheese in a mixing bowl.
3 Divide mixture among 4 individual casseroles or (10-ounce) custard cups sprayed with butter-flavored cooking spray.
4 Mix together the flour, baking powder, and parsley flakes. Then stir in the skim milk, egg, and mayonnaise.
5 Spoon batter over the top of the casseroles and bake for 30 to 35 minutes.
6 Let casseroles set for 5 minutes and serve.
Additional Information
Place peas in a colander and rinse under hot water for one minute to thaw quickly.
