Ingredients
2 tbsp unsalted butter
3 cup chopped apples , peeled, finely chopped (Golden Delicious preferred)
2 cup fresh chopped onion , finely (about 1 large)
2 medium garlic cloves , minced
1 tbsp curry powder
1 pinch salt
0.25 tsp ground cayenne (red pepper)
0.5 cup whole milk
2 tbsp cornstarch
2 cup low sodium chicken broth
1 lb turkey breast cutlets , cooked and chopped (about 6 cups)
1.5 tbsp fresh lemon juice


Directions
1 In large pot, add butter and heat over medium until melted. Add apple, onion, and garlic. Cook 12 minutes, covered.
2 Add curry, salt, and red pepper.
3 In separate bowl, whisk milk and cornstarch. Add to broth.
4 Lower heat and cook 4 minutes, stirring continually until mixture is thick.
5 Add turkey and lemon juice. Cook 5 minutes or until turkey is heated.
Additional Information
This is a great way to use leftover turkey from the holidays.
